Bruno leaves Belluno to spend a year discovering the nature of the Amazon Forest, the indigenous culture and especially the ancestral cuisine. Arrived at his destination, he soon realizes that the influence of the Western world has deeply changed the indigenous tradition. Dishes that are served as ‘ancestral’ are not prepared with ingredients coming from the chakra, the ancestral agricultural system, but are made with products of the Western cuisine.
Bruno wants to create something more authentic that draws its own power from the ground and from the history of the Kichwa people, towards the reconstruction of a lost identity. And this is how the first laboratory of ‘Amazon cuisine’ was born.
In a series of meetings with particular characters that mark Bruno’s conscience (the old woman with the eyes of a snake, the ancestral female cook Alicia, the Belgian chocolate maker…), Bruno dips in an unknown paradise, the heart of the Amazon, so different from the Chestnut Trees forest behind his house close to the Dolomites.
